Let’s board the gastronomic restaurant: “Les sources de Fontbelle”
Direction the southwest of France, more precisely in the city of Angoulême where we had the pleasure of discovering the gourmet restaurant "Les Sources de Fontbelle".
The spectacular building arouses curiosity… Abrupt lines, dark colors, materials such as steel and rough stone make us believe that we are in front of a contemporary museum. Stéphane Champin, the conductor, and Guillaume Veyssière, the maestro, welcome us for a gourmet escape in the middle of nature.
The place: Unpublished
The huge glass roofs open to nature offer the possibility of a psychic and culinary escape.
Raw materials such as zinc, solid oak or even Vilhonneur stone give this unique place an authentic character.
In the kitchen
Chef Guillaume Veyssière cut his teeth at Jean Ramet in Bordeaux, then Miramar in Théoule-sur-Mer and Mas Candille in Mougins before heading to Bruneau, the famous three Michelin stars in Brussels. Originally from Angoulème, he returned there in 2009 to open his establishment La Ruelle where elegant and daring cuisine is served there to the delight of gourmets.
The Les Sources de Fontbelle restaurant was born in 2019!
His philosophy: Do with what nature gives us!
The chef invites us to his table for a “gastronomic journey”! On board local products “here, we have everything. Raising deer from Eaux Claires, veal from Chalais, snails, shellfish, oysters from Marennes, wild flowers such as hawthorn, wild thyme or even juniper, which I use to macerate pork bacon , matured in a marble cellar. A very old method. I'm just an actor in a scenario, I do with what nature gives me. At home we live with seasonality, we wait for strawberries. »
Indoors
In the dining room, everything is orchestrated by Stéphane Champin. Having passed through the workshop of Edmond **, Pierre Gagnaire or even the Abbaye de la Bussière, he is not at his first attempt!
This is why they called on the Nordways brand to equip their brigade.
