On the road to Col de l'Iseran, a stone's throw from the slopes of the Fornet Pissaillas resort, you won't be able to miss this magnificent all-wooden chalet called l'Atelier d'Edmond. Proudly displaying 2 stars in the Michelin Guide, it is thanks to a refined and genuine menu, honoring the artisan producers of the region.
The Chef, Benoit Vidal, offers a cuisine that aptly blends the Savoyard terroir and its Catalan origins.
He discovered cooking in his mother's and grandmother's petticoats. Since his earliest childhood, he dreamed of becoming a cook. After working for the big names in gastronomy, he moved to Atelier d'Edmond. 1st star in 2012, the 2rd is not long in coming and arrives in 2015.
His Proust madeleine: The egg with sorrel from his grandmother.
The framework of the Atelier d'Edmond transports us, a traditional wooden chalet, a well thought-out decoration creating a real Savoyard atmosphere.
The dishes: Flame-grilled Savoy trout, crayfish with candied lemon, saddle of lamb ...
The number 1 problem in a gourmet restaurant at the foot of the slopes is very (very) long working days… sometimes, you can stand for more than 15 hours at a stretch!
Needless to say, the incessant comings and goings wear out the legs, feet and back. And to concentrate on your work, you have to be able to forget your feet. Benoit Vidal is convinced of this and, eager to find real comfort, he agreed to receive us and talk to us about his problems.
Thus, to live up to their expectations in terms of footwear, we have chosen to have several models of kitchen shoes tested.
The Bjorn, Silvo, and Ted models for the Chef's squad and the Giulio model for the indoor team.
The Silvo and Ted models were greatly appreciated thanks to their non-slip sole called NW Shark®. SRC-certified, this sole, designated by our research and development teams, is particularly suited to traditional catering trades. In addition to its non-slip, these 2 models are robust, light and comfortable.
The low density mono-density PU contact sole provides excellent cushioning and lightens the daily life of cooks.
As for the Giulio model, it was quickly adopted by the restaurant team and the sommelier. An elegant shoe, combining the comfort of leather with a non-slip sole that is more secure during rushes in the service. The butler says he has never worn such a comfortable model in his life!
The entire NordWays team would like to thank Chef Benoit Vidal and his brigade for their enthusiasm for the ambassador project!
